How the estimate is built
Warmer dough ferments faster: the rate roughly doubles for every 10 °C rise.
More yeast shortens the time; the time is inversely proportional to the yeast percentage.
Strong flour ferments a little more slowly than weak flour.
Cold retard adds a long fridge phase (about 4 °C) on top of a short room rest.
